2016 was a hot and early vintage, however the vines shone through with great balance and delicate fruit flavours in a rushed year.
Small crops from our 38 year old vines produce intensity in both flavour and acidity, and so we are able to use a small amount of new oak (around 25%), wild yeast and 8+ months on yeast lees to build complexity without losing freshness and vibrancy.
Whilst this style wins many over as a refreshing change from traditional Australian Chardonnays, it will evolve in the cellar, deepening in richness and complexity over the coming years (and decades).
Our Chardonnay is grown at our 'Lark Hill' Vineyard and farmed Biodynamically for sustainability and to preserve its unique terroir.
