DARK HORSE VINEYARD WINES
Dark Horse Vineyard was planted in 2000, in the Murrumbateman sub-region of Canberra. It was purchased by the Carpenter family in 2011 and converted to Biodynamic farming immediately.
At 620 meters elevation it is lower and therefore warmer than Lark Hill Vineyard, suiting later-ripening varieties. Relatively recent (35 million years ago) deposits of Granite define this area and these deep, fertile soils are the basis of the great Syrah/Shiraz producing vineyards in this region.
Dark Horse comprises Sangiovese, Viognier, Roussanne Marssanne and Syrah, with newer clones of Sangiovese and Syrah introduced from 2011 when the Carpenters took ownership.
Certified Organic & Biodynamic from 2011.
Made from Syrah rosé, it's a "Pet-Nat" (that's hipster for Petillant Naturel or Natural Sparkling), which means that right at the last possible minute we transferred the fermenting wine to bottle, capturing the fizz produced by the yeast.
No Sulphur, no chemical additions, just Sunlight, Syrah grapes and happy yeast.
The result is bright pink, dry, crisp, refreshing sparkling wine. Being a Pet Nat it still has the lees (solids) in the bottle, so you can gently stir them in to serve it cloudy, or stand it upright in the fridge overnight to let it settle clear.
You don't have to put on that red light....

With its floral aromas and hints of apricot and ginger the Viognier, from the Rhone Valley in France, is a delicious food friendly alternative to some more established varieties. This wine has fresh nectarine and cumquat flavours and a component was wild yeast fermented in French Oak to add creaminess and complexity to the vibrant palate. There are hints of toasted hazelnut and brioche, and the finish is long and textured.

40% Marsanne, 30% Roussane, 30% Viognier.
The 3 components were harvested spearately and vinified differently - the Marsanne skin-fermented, the Viognier tank fermented and the Roussanne fermented in 5-10 year old French oak.
The blend combines these 3 to give structure, complexity and a rich palate.
Perfect with rich white meat like roast pork or barramundi, or a creamy pasta dish.

Our Sangiovese shows cherry and mulberry aromas, with cinnamon & clove spices and a fully flavoured and savoury palate with soft tannins. Sangiovese is perfect for Australian cuisine, suiting red meats and strong flavours from the BBQ - yet, given its Italian origins, it is no surprise that the lighter structure and vibrancy make our Sangiovese the perfect choice for more casual occasions and a wide range of dishes.

Shiraz grown in the red granite soils of our Dark Horse Vineyard produces wines of great distinction and flavour. Brambly fruit and a twist of white pepper are enlivened by co-fermentation with 4% Viognier. Maturation in French oak hogsheads gives spice and integration without intruding on the perfumed fruit. Whilst made to be enjoyed young, this wine will cellar gracefully.

"Scuro" is a blend of Sangiovese and Shiraz from our Dark Horse Vineyard, co-harvested and co-fermented. Scuro (meaning "Dark") is named for both its Italian roots and for the impressive dark colour that took us by surprise during fermentation.
Extended maturation in French Oak Hogsheads has resulted in a powerful and generous wine with a deep ruby hue, rich palate and great cellaring potential.

This Sparkling 'Burgundy' is a blend of Shiraz and Merlot, made in the traditional method and fermented in this bottle. It is a classic full bodied Australian style of Sparkling red wine, with generous fruit and complexity from extending both in barrel and on yeast lees in the bottle. Partner this powerful wine with rich game dishes - it is a the perfect wine with Turkey on Christmas day.

Super-ripe Marsanne grapes from our 'Dark Horse' Vineyard were fermented on skins and a portion of reserved juice added back to give freshness and sweetness. The result is a deep gold, luscious dessert wine with aromas of honeysuckle, orange blossum and toasted hazelnuts, and a rich, textured and complex palate.

2013 may be remembered as one of the best vintages in Canberra with a warm summer and a dry autumn giving ideal ripening conditions - however when we left a parcel of Shiraz on the vine to finish ripening, we underestimated how fast things were still moving.
The resulting grapes were very ripe both in flavour and sugar levels, and it seemed the wine had already decided its own fate. This Shiraz was fortified with brandy spirit to 18.5% and is our take on the classic style; rich, ripe red fruits and spice lead a boisterous palate with fine tannins and beguiling sweetness.
We expect this wine (like all Vintage Fortifieds) to cellar for decades (and decades!) to come - and partner perfectly with heavy desserts such as Christmas pudding or blue cheese.
This wine was named for Victoria ('Tory'), the youngest of the Lark Hill family, born in the same year.

Our Exaltation wines are made only when the individual parcels of fruit are amazing enough to justify separating them from their parent batches at the crusher.
Inspired by the Super-Tuscan wines of Italy, this is a blend of Shiraz, Sangiovese and Merlot and is matured for an additional 12 months in large oak barrels.
We release our Exaltation wines as 'ready-to-drink' reserves; this wine does not require extensive cellaring, however further time in the bottle will continue to soften and polish the palate, providing additional layers of complexity over 5-10 years.
